I made this for my husband’s birthday and it was a major hit! The guests hoped it would never end! We cleaned it up!

Crust:
1 cup walnuts
1 cup pecans
1/2 cup unsweetened coconut
1/2 cup pitted dates
Place the above ingredients into a food processor with an “S” blade
Process until a fine, crumbly mix. Now, sprinkle some coconut on the bottom
of a springform pan, a pie plate, or an 8×8 Pyrex container

Filling
3 1/2 cups of cashews that have been soaked for at least 2 hours
2 cups fresh or frozen berries (blueberries, raspberries, strawberries, or a mix.)
3/4 cup of lemon juice, fresh squeezed or bottled
3/4 cup of agave nectar (you can try a mild honey)
3/4 cup virgin coconut oil
1/4 fresh vanilla bean or 1 tsp. pure vanilla
1/2 tsp Real Salt or Himalayan
Place the filling ingredients into a powerful blender, such as a Vita-Mix or Blendtec as a small blender
will not be powerful enough. You could place into a food processor first, then place by portions into a small home blender. Blend until smooth and creamy.
Pour into the container with the crust and freeze to harden.
