Zucchini Noodle Extravaganza!
This is a fabulous raw entrée. A meal you will never forget! The flavors will simply burst in your mouth! You will be surprised at how tasty it is.
Begin with several raw zucchini. I like to have one per person.
Place through a spiralizer (Paderno Spiral Vegetable Slicer) for angel hair or slide through a mandolin (watch out for your fingers!) for fetucini style Or use a vegetable peeler to make wider slices. When you dice, chop, slice food, it actually changes the flavor and texture. Zucchini takes on the flavor you give it, like tofu.
Finger the pieces apart to make a nice pile
Cheezy Saucey Stuff
1 cup of raw cashews or ½ cashews, ½ macadamia (yummy!)
1 cup of water
¼ cup of lemon juice
2 Tbs of seseme seeds
¼ c of nutritional yeast flakes (The yellow kind)
2 tsp of real salt of some kind
1 tsp onion powder
1/8 tsp garlic power (I like to put in a real garlic clove)
1 whole carrot, raw, for color, or a jar of pimientos (4 ozs.)
¼ c. olive oil
Place the above ingredients into a VitaMix blender (powerful) EXCEPT for the Olive Oil.
Blend until creamy smooth, then slowly pour in the olive oil
Set aside to thicken
Meanwhile chop up the following:
Roma tomatoes (I like one per person for a meal)
Drizzle on the Cheezy Saucey Stuff over the Zucchini
Topple on top the chopped veggies and olives
Sprinkle with a dash of salt if desired and the Yellow Nutritional Yeast Flakes
It is so eye appealing anyone will want to try it and once they do, they will beg for more!
